Honey-Rosemary Brussels sprout

Dosha Balance

Ingredients (Serves 2–3)

  • 2 cups Brussels sprouts, trimmed and halved

  • 1½ tablespoons extra virgin olive oil or ghee

  • 1 teaspoon fresh rosemary, finely chopped (or ½ tsp dried)

  • 1 teaspoon fresh thyme leaves

  • 1 small shallot, thinly sliced (optional, adds grounding sweetness)

  • 1 tablespoon raw honey (added after roasting — never baked)

  • ½ teaspoon sea salt or rock salt

  • 1 tablespoon fresh lemon juice or apple cider vinegar (to brighten and aid digestion)

  • A few cracks of black pepper (optional; avoid for high Pitta)

  • Optional garnish: toasted walnuts or pumpkin seeds for crunch and grounding

Method

  1. Preheat oven to 400°F (200°C).

  2. On a baking sheet, toss Brussels sprouts and shallots with olive oil, rosemary, thyme, salt, and a touch of black pepper (if using).

  3. Spread evenly and roast for 20–25 minutes, stirring halfway through, until golden and tender inside with crisp edges.

  4. Remove from the oven and let them cool slightly (lukewarm is ideal for maintaining honey’s Ayurvedic integrity).

  5. Drizzle with raw honey and lemon juice. Toss gently to coat.

  6. Garnish with toasted nuts or seeds if desired, and serve warm.

Ayurvedic Notes

  • Warm, lightly sweet, and oily foods calm Vata — perfect in autumn and winter.

  • Herbs like rosemary and thyme gently stoke agni (digestion) without overheating Pitta.

  • Honey in small amounts is lekhana — light and cleansing for Kapha when used raw and not cooked.

  • Lemon or apple cider vinegar adds gentle acidity that aids liver function and balances heaviness.
